Creamy Chicken & Bacon Pasta (No Boil)

My baby loves bacon; there are no two ways about it, he truely does.  I on the other hand could take or leave it, I'm not a big bacon fan.  So when I came across this recipe a couple of weeks ago I knew he would love it.  The orginial recipe called for ONLY bacon but I decided to halve the bacon and throw in some chicken instead.
 
Creamy Chicken & Bacon Pasta (No Boil)
 
Ingredients
12 oz campanelle pasta
32 oz low-sodium chicken broth
12 oz evaporated milk (2%)
1 1/2 tsp garlic powder
1 tsp onion powder
1/4 tsp crushed red pepper flakes
1/2 cup grated parmesan cheese
4 oz light cream cheese
4 slices cooked and chopped bacon
1 cup frozen peas (or more)

Directions
Cook the chicken, cube and set aside ~ cook the bacon, chop and set aside ~ in a large dutch oven combine pasta, evaporated milk, chicken stock, onion powder, garlic powder and red pepper flakes ~ cover and simmer for 15-18 minutes or until pasta is cooked and the liquid has reduced ~ once the pasta has cooked stir in the parmesan cheese, cream cheese, frozen peas, bacon and chicken ~ allow to simmer for approximately 5 minutes ~ remove from the heat and let stand, covered, for more 5 minutes allowing the sauce to thicken.

This pasta was really quick - a great weeknight meal.  It was also quite creamy and delicious!  Not the most healthy dish but if you are having a craving for some comfort food with bacon and/or pasta give it a try!
